Tyler's first Birthday Cake Attempt!


Wow, Tyler's Birthday is coming up in less than 2 weeks....ahhhhh where has the last year gone? Oh right, I was busy chasing Doctors around fighting to find out what's wrong with my little dude! It's crazy how fast a day, week, months fly by when you have children.

Since finding out 7 months ago what was causing Tyler so much pain, discomfort and growth delays. We have finally been living a more sane life, minus the issues of reminding the girls NOT to feed the baby! Kind of like the signs you see "Don't feed the Bears".

I love finding humor in life, it really makes it easier to get through the tougher days!

So....As you have read above, Little Tyler is going to be One! Yay, a party! My husband (Chris) and I decided that everyone will be eating a "Tyler safe" cake, it's a lifestyle that we will have to adjust to as a family. Now that Tyler is getting older and understanding LOTS more, there will be no more ice cream in the house, instead we'll have blended frozen fruit pops. Tyler's brother and sisters have been so good and flexible with the changes we now have to make. I think it's going to be the hardest adjustment to myself and Chris, we have lived a certain way for years and now our habits have to change. It's in the best interest for our child, so we will do it!

I found a recipe that I was able to tweak to Tyler's standards. I'm excited to try it out, I'm going to be decorating the cupcakes with monkey faces! Tyler has been our "little monkey" from day one, we called him little monkey in the womb, then when he was only able to eat banana's after finding out his diagnosis. The nick name was a perfect fit ;)



Tyler Safe Chocolate cake,

It's moist, chocolate-y, and easy to make (in fact, pretty much fool proof). The leavening is vinegar and baking soda; the moisture is oil, so you can choose a bland, non-soy oil such as canola, corn, etc.

3 c flour (Oat, Rice, it's your choice)
2/3 c cocoa
2 tsp baking soda
2 c sugar

Dry-whisk in a large bowl, make a well and add:

2 c cold water
1/2 c + 2 Tbsp oil
1 Tbsp vanilla (Make sure it's pure vanilla, some imitation brands may contain soy)
2 Tbsp plain white vinegar

Beat well; smash large lumps against the side of the bowl, small lumps OK. Pour into prepared 13x9, two 9" rounds, or 24 cupcake tins. Bake at 350; cakes will take about 25 - 30 min, cupcakes will take 18 - 22 minutes

ICING

2 Tbsp soy butter (In Tyler's case it's omitted)
1 cup powdered sugar
2-3 Tbsp Cocoa Powder, (omit if you want a white icing)
1/2 cup milk of choice (Rice Milk, Soy Milk)

Just wing this part. Keep throwing in powdered sugar until you have the consistency you want. You can't have to much icing.
